Domaine de Fenouillet Muscat de Beaumes de Venise 2024The Muscat grape is best when planted in poor, sandy soils in Beaumes de Venise. The grapes for this cuve are selected after a series of passes through the vineyards to pick the grapes at the proper level of maturity with the desired balance between sugar and acid; a further trie occurs upon entry to the chai. The fermentation, at low temperatures to best preserve the enchanting aromas of the Muscat grape, is stopped at the point where the alcohol

The soil is a classic mix of clay and limestone

after which it settles in steel without fining or filtering and rests in bottle for a minimum of one year before release

in highly acidic sandy gneiss soils

the “voile” appears and the wine is left for at least seven years to age in barrel before being declared “Vin Jaune” and being bottled

it spends eight months in steel with a miniscule addition of sulfur dioxide after malolactic fermentation

situated at 400 meters altitude in the Valle de la Orotava

This is a very special cuvée sourced from a single vineyard situated in the most elite section of the domaine

Annual production is in the range of 3000 bottles

The harvest undergoes a full carbonic maceration of whole clusters over one month in concrete and steel tanks

and manages to remain nimble despite a fearsome density
